Camp Food!

Normally my family and I go backpacking.  We have continuously improved in how we pack, cook, and plan meals for our 3 day 2 night trips.  This spring break with the kids is full of so much business that we really didn't have the time to spend doing a longer trip.  

While searching for places for us to go and DO something with the kids, Steve found an Airbnb in Ooltewah, Tn.  We camped stayed 2 days and 1 night at a backwoods campsite on a 500 acre horse farm.  Since we didn't have to pack anything in and the parking for the site was only a few feet away and we didn't have to worry about food spoiling in our backpacks, we were able to take a cooler for fresher food than we are used to.  

I did a quick Pinterest for foil packet meals.  BINGO!  Have I mentioned how much I love Pinterest?!? So many good ideas.  I found a perfect and simple idea for ratatouille.  My kids love ratatouille so it was a no brainer.   

I mixed up all the veggies and seasoning in a large bowl then placed the mixture in foil packets.  Done. Packed in the cooler and ready to go!  But the fun didn't stop there, we also made banana boats.  Bananas slit open, stuffed with chocolate chips, mini marshmellos, wrapped in foil, and ready to cook.

Honestly one of the best outdoor meals I have ever made!

Ingredients:

  • 1 slim egg plant

  • 1-2 zucchini (depending on size)

  • several roma tomatoes (I forgot to count, honestly I just guessed here)

  • 1 red pepper

  • 1/2 tsp minced garlic

  • salt & pepper

  • Olive Oil (enough to coat and spread the seasonings)

Cut up all veggies into bite sized pieces.  Mix all ingredients in a large bowl and stir until all veggies are well coated in oil.  Place enough veggies for one helping in the center of a foil square.  Fold foil into packets for grilling.  Store in cooler until ready to cook.

Place over foil and rotate as necessary.  Honestly this was a guessing game for me too.  We opened a packet to see if it was done, which it was not so we folded it back up and threw it back on the grate.  I found that when the foil changed color to a light brown color, the veggies were soft enough to eat.

My kids raved about how good this meal was.  Definitely a success!
