Sweet Potatoes for my Sweety

So what does one do when you have a hungry grandbaby and no baby food?  Make it of course!

I'm watching cutey pants Leia for the weekend and I ran out of baby food.  I suppose that I could have run to the store (I do live right across from Kroger), but that requires putting on clothes.  Besides, this is a perfect excuse to do just one more thing with my pressure cooker!!  Seriously, I love this thing.  We didn't get an "InstaPot" because Sam's had electric pressure cookers on sale.  After a quick google search for a side by side comparison, we decided to give it a whirl (the only thing ours won't do is make yogurt).

I had some sweet potatoes in my refinished potato bin.  I had a pressure cooker.  10 minutes later, I received the award for best Noni ever!  Does it make me a bad mom that I didn't make my own kids baby food? In my defense,  I didn't have a pressure cooker when they were little.  Making their food would have easily taken at least an hour longer, more power to ya if you have that kind of time... I didn't.


Ingredients:

  • Sweet potato

  • 1 cup water

Directions

  1. Peel sweet potato.  Cut into 1 inch cubes

  2. Place in pressure cooker with 1 cup of water

  3. Cook on high pressure for 10 minutes

  4. Do dishes while you wait

  5. Release Steam and Whip (I used an electric hand mixer)

  6. Cool

  7. Feed the baby
